Kapha Pacifying Easy Lemon Rice
Ingredients:
1 cup organic white basmati rice
1 1/2 cups vegetable stock
2 tsp Ghee
1 tsp Mustard seeds
1 tsp Tumeric
1 Lemon (juiced)
Sea salt to taste
Directions:
Combine rice and vegetable stock in a pot over medium-high heat and boil for 15 minutes. When stock is reduced, remove rice from heat, fluff with fork and set aside.
In a large skillet, melt ghee and add mustard seeds and turmeric, stirring for 5 seconds (no longer or it will burn).
Add rice to the pan and mix until all rice is bright yellow. Cook for 5 minutes.
Finish by stirring in fresh lemon juice and a pinch of salt to taste. Enjoy as a stand alone entree or with a simple salad or vegetable dish.
Serves 2-4
