Kapha Pacifying Easy Lemon Rice

  • 1 cup organic white basmati rice

  • 1 1/2 cups vegetable stock

  • 2 tsp Ghee

  • 1 tsp Mustard seeds

  • 1 tsp Tumeric

  • 1 Lemon (juiced)

  • Sea salt to taste


  1. Combine rice and vegetable stock in a pot over medium-high heat and boil for 15 minutes. When stock is reduced, remove rice from heat, fluff with fork and set aside.

  2. In a large skillet, melt ghee and add mustard seeds and turmeric, stirring for 5 seconds (no longer or it will burn).

  3. Add rice to the pan and mix until all rice is bright yellow. Cook for 5 minutes.

  4. Finish by stirring in fresh lemon juice and a pinch of salt to taste. Enjoy as a stand alone entree or with a simple salad or vegetable dish.

    Serves 2-4
